With an ever-increasing world population, current farming practices are simply unsustainable – alternative sources of protein are essential for the very survival of both humans and the planet. In addition to their impressive nutritional profile – high in protein, healthy fats and dietary fibre as well as rich in vitamins and minerals – insects emit fewer greenhouse gases and require less land and water to produce than cattle making them an ideal food of the future.

Increased publicity surrounding the topic of edible insects has definitely encouraged people to give them a go. Overwhelmingly people are pleasantly surprised by the experience once they have overcome any associated ick factor. Educating our children on the topic is a great step forward – kids are so receptive to the taste and texture of insects in the absence of any preconceived ideas, and of course blending insects with other tasty and more recognisable food ingredients and flavours can increase the appeal.
