Chocolate “callets” are designed for clean and easy melting. They come as tiny buttons that aid preparation for tempering or just adding in there solid form to baking. Allows smooth, consistent melting. Tempered and able to be used. If you want to use for coating with a snap and gloss. Re-tempering could also be required if re-melting exceeds 31°C. It is a process where the different fat solids are heated and cooled to retain the crisp clean snap and the glossy sheen. The couverture as its known is available in 3 types with differing percentages of cacao solids. Dark, milk and white. All are easy to make use of with differing depths of intensity depending at the solids. The higher the percentage the depth and bitterness increases. Can be utilized in many applications like ganaches, baking and covering.
