This raw organic Oak honey comes from a mountain Biosphere Reserve at 1200 metres and was one of the most winners in the Great Taste Awards 2017. Dark honeys are among the most highly valued of all the honeys on account of their higher antibacterial and antioxidant qualities. They have a stronger flavour and are less likely to set as a result of its low glucose content. This particular oak honey is very dark in colour, almost black. Oak is a type of honeydew honey – meaning that it comes from the sap of the tree not from the flower nectar.The bees love to feed on the sap that comes from the acorns, and this sap lends a beautiful and unique taste to the honey. It is a full flavour with smoky and malty notes. This particular type of oak honey comes from the mountain oaks. An oak weevil burrows into the acorns on the oak tree which allows sweet sap to drift out all through July and August. The bees feed on that sap steadily until it turns bitter, and then they leave until the oak weevils start drilling again the next year. This honey is made by the bees of Antonio Simon, an artisan 4th generation bee-keeper who takes pride in producing his honey in a traditional way without adding or taking away anything. Antonio’s hives are based in the mountain ranges north of Madrid, and his bee-keeping practices and the land surrounding his hives have been certified as organic by the Committee of Organic Agriculture in Madrid.The oak tree, sometimes called roble in Spanish, is a large deciduous tree which is a member of the beech family. Some oak trees can live over 1000 years! Oak honey is particularly good to use in recipes such as cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes.

Ideal for use in cakes, cookies, toppings, warm honey teas and meat glazes.
Raw honey naturally crystallises over time. If yours has crystalised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (longer if necessary). The heat will not damage the honey, the important thing is that you don’t heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars and then drape a tea towel over them. It can take up to two days to fully liquify.
