Raw organic wilderness honeys, all from the hives of Antonio in the northern Spanish mountains of Sierra De Guadarrama. This set makes a perfect gift for somebody who is a honey connoiseur with an interest in unique, high-quality, all-natural, raw honeys. Raw Organic Oak honey is a very deep and rich tasting tree honey; it has a fruitiness in addition to a deep woody flavour. Tree honey has a tendency to be dark, have a stronger flavour and area less likely to set because of a fairly low glucose content. Raw Organic Wild Lavender honey is a light and pleasing herb flower honey, it has floral notes and a creaminess like vanilla – but doesn’t have rather as strong a flavour as honey from cultivated lavender. It comes from bees feeding on the wild lavender bushes in Spain. It is different from the tree sap honey which is steadily dark in appearance and strong in taste, this honey has a tendency to be very mild, light and softer in taste. Raw Organic Eucalyptus honey is a in point of fact beautiful tasting honey; it has a wonderfully fruity creaminess at the side of a very mild eucalyptus/menthol aftertaste. It is a fairly light-tasting tree honey. It shares characteristics with other herbal honeys, such as thyme or sage. Produced by the bees of Antonio Simon, a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio’s hives are based in the wildest places. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
