Last Summer I (I’m Tim Walker the owner of the Raw Honey Shop) visited beekeeper Asterios, who lives right in the east of Greece in a very wild and underpopulated area. Asrerios drove me maybe three miles deep into a wild forest. We came upon a clearing surrounded by Lote (Sidr) Trees, where his hives are. Here the bees collect the rich nectar from the yellow flowers in the late Spring. The bees have collected nectar from the Sidr with spring blossom from the forest, much of which is Broom, which produces a very nice antibacterial honey. Asterios’ Raw Greek Sidr & Spring Blossom honey, is a thick honey with a rich, lavish and herbal sweet taste. It is extremely pleasant with a reasonably sour and tangy aftertaste. It’s not like dark tree honeys such as Oak or Chestnut. The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey. Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised. Where it comes from: This Sidr comes from isolated forests that stretch for miles in the north of Greece. More on this honey: Sidr Honey is likely one of the finest variants of honey on the planet. It comes with a distinctive taste, and is known for its antibacterial qualities. This honey is regarded as sacred in many religions. About the beekeeper: It was brought to us by Asterios, who lives in a very wild area of Greece. His hives are situated deep in the forest, miles from places where pesticides, herbicides and fungicides. Asterios is preparing for organic certification and follows organic principles. Please know that raw honey does crystallise and this can be a natural process that occurs mainly because of the natural glucose in raw honey. Raw honey naturally crystallises over time. If yours has crystallised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (longer if necessary). The heat will not damage the honey, the important thing is that you don’t heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars and then drape a tea towel over them. It can take up to two days to fully liquify.
