Rosemary honey, in 500 g jar. Rosemary honey is a generally Mediterranean honey. It boasts a dark amber color and slow crystallization. The flowering of rosemary runs from January/February until October. The most intense period is in early spring, when the nectar is harvested by bees. As with other early blooms, even for rosemary honey it is difficult to get production in satisfactory quantities, as incessantly hives, just out of the winter months, wouldn’t have enough bees to collect enough honey. Harvest period: February-March. Texture: crystallized Colour: straw yellow to ivory. Scent: aromatic herbs, floral. Taste: aromatic, bitter almonds, citrus. Pairings: very good if accompanied with goat cheeses and medium-aged sheep.
