Thomas’ raw Greek fir honey starts with a mild nuttiness then explodes into a bold, juicy sweetness with hints of savoury herbs and a slight sourness in the aftertaste, similar to the sourness experienced at the end of blackstrap molasses. The taste lingers sweetly on the palate for a good time. It has grassy, herbaceous smell lingering within the honey sweetness mild and green reasonably similar to fennel or winter savoury. This Fir tree honey is harvested from altitudes of at least 1500 metres on a mountain close to Argithea in Greece. When runny, the colour of this honey is dark amber to nearly black, every so often with a slight greenish tint. This can be a dark thick runny honey. It is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion. It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his family’s hives, which are in secluded forest glades in and around mountains of central Greece. Comes from Argithea in the Greek Mountains, a largely untouched, wild region where bears roam.
Raw honey naturally crystallises over time. If yours has crystallised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (longer if necessary). The heat will not damage the honey, the important thing is that you don’t heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars and then drape a tea towel over them. It can take up to two days to fully liquify.
