It’s characterised by its streamlined shape, the fineness of its shaft, with a black hoof, soft marbled fat and a smooth texture. It has a gorgeous, delicate flavour with a long lasting aroma at the palate. The acorn-fed Ibérica shoulder ham comes from pigs fed with acorns throughout the “montanera” period during which the pigs are allowed to roam freely. Small white-coloured “specks” or “crystals” can also be seen when cut, which can be a sign of a slow curing process and low salinity. Does not include ham stand.
