Brindisa Bellota Ibérico Ham – “jamón ibérico” – is made simplest from ibérico pigs. These pigs range freely all through large tracts of Spanish oak trees, eating the “bellotas”/acorns. This diet is key to the unbelievable taste of bellota ibérico hams. These hams are simplest released after 4 years maturing, when the deep flavours and complex aroma are at their peak. Brindisa runs a Ham School in London where they are going to train you to carve your ibérico ham.
