The Iberico ham grass-fed is a piece obtained from the hind limbs of the Ibérico pig. It’s characterised by its streamlined shape, the fineness of its shaft, with a black hoof, soft marbled fat and a smooth texture.
It has a phenomenal, delicate flavour with an enduring aroma at the palate.
The ham comes from Ibérico pigs which are pastured and fed aromatic grasses, legumes and natural grains which are wealthy in sodium, fibre and protein.
Small white-coloured “specks” or “crystals” will also be seen when cut, which can be an indication of a slow curing process and occasional salinity.
