The richness of Japanese wagyu means somewhat goes a long way as it’s very wealthy. This is a very special meat and, until recently, was once unavailable in the United Kingdom. The cattle are reared in keeping with strict regulations and the resulting meat is unlike some other on this planet. The intense marbling of fat dissolves into the meat as it cooks, giving it flavour and lending to its melt-in-the-mouth texture.
