Pata negra Ham from Iberian pigs reared at the open range in woodlands situated in Jabugo within the south of the Iberian peninsula, on a diet of acorns. Natural drying cellars give the ham refined aromas and Distinctive taste characteristics. This pata negra ham is distinguished from all other by its Distinctive and unique texture, aroma and flavour. The color of this Iberico ham is crimson with small fat inclusions (little points) within the meat. This Iberian ham melts at the tongue, is low-salt and has a good looking aroma. These traditional products are elaborated in Jabugo, a famous region in Spain for quality pata negra hams. The curation time of this air-dried ham is 36 – 48 months. Iberian ham come from the Iberian black pig breed. The principle characteristics that distinguish the standard from all other ham is derived from the purity of the breed; the breeding of the Iberian pigs that roam and graze freely within the elm and cork oak pasturelands, and a diet of acorns.
